Lord of Cheesecakes

Ingredients

  • 1 3/4 cups graham cracker crumbs (about 1 plastic-wrapped set)
  • 1/3 cup butter, softened
  • ⅔ cup white sugar
  • ¼ cup brown sugar
  • 16 ounces of cream cheese, softened (2 8-ounce packages)
  • 2/3 cup sour cream
  • 1 teaspoons vanilla extract
  • 2 vanilla beans
  • 2 eggs

Directions

  1. Make sure all your ingredients are room temperature seriously
  2. Heat oven to 325 degrees F.
  3. Mix graham cracker crumbs, butter and 1/4 cup brown sugar; press onto bottom and edges of 9-inch pie pan
  4. Beat cream cheese and white sugar in large bowl with mixer until blended.
  5. Scrape the vanilla beans and add the seeds, vanilla extract, and sour cream. Mix well.
  6. Add eggs, 1 at a time, beating on low speed after each addition just until blended. Pour into crust.
  7. Bake 45 minutes or until center is almost set. The edges should look “dry” but the middle should look “wet.” It will continue to cook after you remove it from the oven. Cool on the counter for 30 minutes and then refrigerate at least 4 hours.
